Freeze-it!: Grated Carrots

To follow up on the Lancaster Newspaper Freezer Article, I will be posting recipes and freezer ideas. Freezing food is a great money-saver and time-saver for meal preparation. Be sure to post your favorite ideas and recipes in the comments!

I think I may be unique in this staple that I keep in my freezer – grated carrots! I used to love keeping cooked carrots in the freezer for my toddler, because they thawed soft and tasted fine. But these aren’t even cooked. I know, it probably sounds weird. But I have had great success with them.

I use them mostly in baking, especially morning glory muffins (recipe coming next week). They aren’t as bright of an orange after you freeze and thaw them, but you don’t notice that after they are baked. I actually even still use them in our favorite orange carrot jello salad. They taste fine, and you don’t notice their brightness unless you are really looking for it.
